For the patty burger:
- 1 pound ground beef
- 1 pound ground chorizo, removed from guts if necessary
For the spicy guacamole:
- 3 large California avocados
- 1/3 cup red onion finely chopped
- 3 tablespoons coriander chopped
- 2 tablespoons fresh lime juice
- 1 chipotle chile in adobo sauce
- 1/2 teaspoon garlic powder
- salt to taste
For the Chipotle Mayo:
- 1/2 cup of mayonnaise
- 1 chipotle chile in adobo sauce
- 1 to 2 teaspoons of milk
Other ingredients for burgers:
- Pickled jalapenos
- Crispy thick cut bacon
- Sliced cheddar cheese
- 8 hamburger buns
To make the spicy guacamole:
